The Bilona Method: five steps, zero shortcuts

It takes roughly 25–30 litres of milk to make just 1 litre of true bilona ghee. Here's why it's worth the extra time.

    Fresh A2 Milk

    We start with fresh A2 cow or buffalo milk, gently boiled the same day it's collected.

  2. 02

    Cultured into Curd

    The milk is set into curd (dahi) overnight using a natural culture -- the first step of the bilona method.

  3. 03

    Hand-Churned (Bilona)

    Curd is churned by hand with a wooden bilona in both directions to separate white butter (makhan) from buttermilk.

  4. 04

    Slow-Cooked

    The butter is simmered slowly over a low flame in small batches until the moisture evaporates and it turns golden.

  5. 05

    Filtered & Jarred

    Once cooled, the ghee is filtered and hand-poured into clean jars -- ready for your kitchen.

Why Ayurveda calls ghee a daily essential

In Ayurveda, ghee (ghrita) is considered one of the most nourishing fats you can cook with — used in daily meals, in home remedies, and in rituals for generations. Bilona-method ghee retains naturally occurring fat-soluble vitamins A, D, E and K, and because the milk is first cultured into curd, many people who find regular dairy heavy find bilona ghee easier to digest.

Bilona ghee is made by first culturing milk into curd, then hand-churning it into butter, and finally slow-cooking that butter into ghee. Most commercial ghee is made directly from cream or industrial butter using machines, which is faster but skips the fermentation step that gives bilona ghee its distinct aroma, taste, and easier digestibility.
